  • Add 8 cups of water in it.

  • Heat 2 tbsp each of olive oil and butter in a big pot over medium heat.

  • Then, add 2 tbsp dried parsley, 1 tsp dried basil, 1 bay leaf, 1 pinch dried thyme, 2 cartons chicken broth, and 1 can crushed tomatoes. Bring to a boil.

  • Now, stir 2 cups shredded cabbage, 1 can light red kidney beans, and ½ cup quinoa into the soup.

  • Add ¾ cup of each frozen peas (thawed) and cooked lentils (green or brown).
  • Cook for additional 5 to 10 minutes, or until vegetables gets tender. Cool it slightly. Add spinach to soup pot.
  • After that, pour soup in blender or food processor until it gets smooth and creamy. Transfer soup back to pot, and heat the soup over a low flame until it gets hot.

  • In a soup pot, add 6 cups of water with the reserved liquid from the mushrooms and the sliced mushrooms.
  • Bring the water to boil over medium to high heat.
  • Add 3 tbsp sherry cooking wine, ¼ cup vinegar, 2 tbsp soy sauce, 1-½ tsp of kosher salt, 1 tbsp grated ginger and 1 pound tofu (extra firm). Cut the tofu into ½ inch cubes.
  • Lower the heat and let it simmer uncovered for around 10 minutes.
  • Take a small bowl, whisk 2 tbsp cornstarch with about 3/4 cup hot broth from the soup pot until cornstarch gets dissolved.
  • Transfer the mixture back into the soup pot and keep stirring. The soup will thicken slightly.
  • While stirring continuously, drizzle the 2 beaten eggs into the hot soup.
  • Add 6 scallions and ¼ tsp white pepper and cook for another 2 minutes.
  • You can drizzle of sesame oil on top. Soup is ready.

  • 2 tbsp of teff seeds or amaranth seeds, (it is optional)
  • 1 avocado, sliced

Procedure:

  • Wash all the vegetables listed above (Zucchini to Garlic).
  • Pulse each through the food processor til they get finely chopped. Make sure that you include the kale stems; they have all the potassium in the kale.
  • You can keep a little parsley for garnishing, if desired.
  • As you proceed, combine each veggie to a big, heavy-bottomed stock pot. Add 1 liter filtered or spring water.
  • Add liquid amino, seaweed, and the teff or amaranth seeds, if using.
  • Bring it to boil, then reduce the heat, cover and simmer gently for 30 minutes.

  • 820 gm of pumpkin, diced as half-moon pieces
  • 1 onion, peeled and diced
  • 8 garlic cloves, peeled and smashed
  • 450 ml of water
  • 200 ml of fresh milk
  • 1 sprig fresh Rosemary
  • 2 tbsp of olive oil
  • salt and pepper to taste.

Procedure:

  • Pre heat the oven at about 150 degree Celsius. Separate the seeds of pumpkin.
  • Add 1 tbsp of olive oil over the pumpkin.
  • Roast it for about 15 minutes with a sprig of fresh Rosemary.
  • After 15 minutes, leave the pumpkin to cool. Remove the skin and cut it into cubes.
  • Heat 1 tbsp of olive oil in a sauce pan.
  • Saute garlic and onion for 2 minutes.
  • Add the pumpkin and saute for further 3 minutes.
  • Pour in 350 ml water and bring it to a boil. Close the lid and let it simmer for 8 minutes.
  • The pumpkin should be softer by this time.
  • Leave the soup to cool down a bit.
  • Transfer the soup into blender and blend till it gets smooth.
  • Reheat the soup with 100 ml of water and 200 ml of milk.

  • Allow the soup to get cool enough to place in a blender.
